- Colombia is decaffeinated using high mountain spring water and Ethyl Acetate (EA), a natural by-product of sugarcane processing. EA is present in every coffee cherry in its natural state (as well as in many fruits and vegetables). This water-EA process allows for gentle extraction of the caffeine from the bean and avoids excessive heat or pressure which maintains the natural structure and flavor of the coffee bean.
- Brasil uses the Swiss Water decaffeination method which is a 100% chemical-free process. Using pure water, the caffeine in coffee beans is gently removed until they are 99.9% caffeine-free, without compromising the coffee’s unique body, flavour and aroma characteristics.
- Mexico is decaffeinated using the Mountain Water Process which involves sourcing natural mountain water from Pico De Orizaba (one of the largest mountains in Mexico). The coffee is soaked and washed in clean water numerous times and then the water is passed through a caffeine filter before being re-introduced to the coffee. This natural process leaves a full flavoured coffee without any chemical residue.
